Kilishi

Kilishi is a Nigerian delicacy, a type of beef jerky, made from thin strips of dried, marinated beef, often seasoned with a blend of spices similar to Suya.

  • Kilishi is a traditional, dried meat product, specifically beef jerky, that originates from Hausaland in Northern Nigeria and Southern Niger. 
  • Preparation:
    • Thin strips of beef are dried, then marinated in a spice blend (similar to Suya). 
    • The spice blend typically includes ingredients like ground peanuts (kuli kuli), chili peppers, ginger, garlic, and other seasonings. 
    • The marinated meat is then dried again, often sun-dried, to preserve it for long-term storage. 
  • Flavor and Texture: Kilishi is known for its spicy, smoky, and savory flavor, with a chewy texture. 
  • Serving: Kilishi is often served as a snack or appetizer, and can be eaten with pap (akamu) or cassava flakes (garri). 
  • Other Names:Kilishi is also sometimes referred to as “Nigerian beef jerky”.
